A medium dark roast grown on the volcanic Indonesian island Java. This coffee is aged in open sheds exposed to warm moist air. Some estates age their coffee for up to three years! As the green beans age they turn a light beige colour. The process helps strengthen the flavour and lower the acidity. The coffee has flavours of cocoa, is earthy and herbaceous.
